Food for Thought
When I moved out to Louisiana a couple of years ago, I slowly learned how to cook for myself. I am not talking about spaghetti and meatballs or macaroni and cheese either. A few of my co workers and friends got me in the habit of branching out of what I normally cook. When that happened I started to devote time to seek out new recipes, spend time at the grocery store, and enjoy the time I have in the kitchen. It was through cooking that I now have an appreciation for certain foods and have found it easier to be a vegetarian.
I can remember a few times where I made a dish that was too good to be true but it was delicious! Also it feels good knowing that it is something I made with my own hands.
Here are just a few of the vegetarian recipes that I have made and enjoyed:
Kimchi Quesadilla
I love a good quesadilla. So when I found this recipe I was nervous about trying it out because I didn't have any experience cooking it before. I found it easy to make and it took me little time to prep. Definitely recommend this for people on the go but still want to grab a quick bite to eat.
Pumpkin Pasta
Pumpkin Spice? Pumpkin Pie? November is the perfect time to try this recipe out. I made this recipe as a challenge to make something with pumpkin every week. This was the one recipe that stood out the most and I have made a few times with friends. I usually add vegan sausage in the mix and it takes a while to make.
Butternut Squash Pasta
I had a friend recommend this type of recipe to me. This one took me a long time to make and quiet frankly, it was a pain in the butt. I can't count the number of times I have made a mess in the kitchen because of it. It is worth the hard work though. My parents loved it and they normally don't eat anything without meat. Add a little spice to the butternut squash blend such as cayenne, and chili pepper for extra flavor.
Garbanzo Beans/Roasted Sweet Potato/Rice/Greens
This was not really a recipe and it's pretty simple to make depending on what you are in the mood for. For the sweet potato, just peel and dice into small pieces. Add curry to the mix and then bake it in the oven. You do the same for the garbanzo beans, while including some cayenne or chili pepper to it before roasting in the oven, too. Just read the directions for the rice and cook. I have made this a few times when I am not sure what to make for the week. It doesn't take a lot of time or effort.
